Dave’s Beef Stew

  • 800gm gravy beef
  • 4 small onions
  • 3 med potatoes
  • 400 gm sweet potato
  • 2 cups red wine
  • 2 tblsp olive oil
  • ½ stalk celery
  • 1 kg firm tomatoes
  • 2 med carrots
  • ¼ cup plain flour
  • 2 cloves garlic
  • oregano, basil, thyme, salt, pepper

Chop:    beef, sweet potato and potato into 2cm cubes

Carrot into 5mm discs

Celery into 5mm celery shaped thingys

Tomatoes finely

Coat beef liberally with flour

Add ½ oil and beef to hot french oven on cooktop

Brown beef, add ¼ cup of water

Add onions and celery, brown more

Add all other solids, add more oil

Stir occasionally

Add wine

Add garlic, oregano, basil, thyme

Lid on, on low [with diffuser] for 30 mins

Into 150deg oven for 3 hours

Stir

Another hour in the oven.

Eat
